Quality

Several aspects influence in quality product as follows:

  • PRODUCTION EXPERIENCE: it’s really important having healthy fruits and harvest them at the optimal moment of ripening;
     
  • KNOW-HOW OF OUR MASTER MILLER: grinding must be done following the guidelines and secrets transmitted by our ancestors. The ritual upon arrival of the olives ranges from visual inspection to smell and touch of the newly arrived olives. With this the master miller ensures the freshness and quality of harvested fruits.
     
  • CONTROL OF WHOLE PRODUCTION PROCESS: control of all quality parameters during the whole process as farms of origin, health of olives, quality of water, temperatures during malaxation, duration of malaxation … are key points while obtaining olive oil. Also, in this way it is allowed reach total TRACEABILITY of the oil, an aspect of vital importance for consumer food safety. The whole production process is under the control of the Andalusian Committee for Organic Farming (S. C. C.A.A.E.), a member of IFOAM.
     
  • ORGANOLEPTIC CHARACTERISTICS: thanks to an exhaustive classification of olives at the reception, different high-quality types of oils are stocked in our bodega: Pajarera, Picuda, Hojiblanca, Picual, Arbequina and others. Each one contributes with some specific characteristics, such as, for example, Pajarera gives it its aroma and sweetness, Picuda a little spicy hint, Picual its stability, Hojiblanca its sweetness and the Arbequina its fruity touch. As a result, we are able to prepare a blend that adapts to taste of a specific market so we will have more possibilities of giving our clients the right product.
     
  • PACKAGING: as a complement to our careful process of obtaining and selecting oils, packaging has also been meticulously chosen in order to reach the most select and exigent markets. With our new re-styling carried out in 2019 we have managed to maintain our traditional look with a touch of modernity that characterizes us and that has led us to achieve several design awards.

Recycled and easy-to-recycle materials are always in our mind for choosing our packaging and that’s why we work with FSC papers and cartons, tetra-pak, glass, …
