We work to protect terrestrial ecosystems, the species that inhabit them, and their genetic richness, as they sustain life on Earth; regulate the climate, air quality, and water. They provide us with food, raw materials, energy, and other resources that form the basis of our health, well-being, and economy. Thanks to ecosystems, there is life on the planet.
One of the projects we have undertaken since 2006 is the conservation and maintenance of Pajarera olive groves, a variety native to our region and endangered due to its low agronomic profitability, even though it has significant organoleptic richness, both for milling and as table olives.

Key points: In October 2009, we decided to launch a very special Organic Olive Oil to the market, made from a family olive grove of the PAJARERA variety. This variety is only found in our region, and its area is decreasing every year in favor of more productive production systems and varieties. Thus, one of our goals was to preserve this variety and produce a LIMITED EDITION of this delicate EVOO from a single farm (100% TRACEABILITY).
Background
The maintenance of Biodiversity has always been one of our concerns, so the possibility of preserving the Pajarera variety in our organic farms has been a priority. Its organoleptic characteristics and its dual suitability for table olives and oil pressing have driven us to carry out 2 projects to enhance and develop high-quality organic products from this variety.
Since 2002, the concept of traceability has been regulated by the EU and must be implemented by all food products on the market.
The majority of consumers want to ensure that food safety is guaranteed in the products they consume, which is why organic products with a single origin are highly appreciated by such consumers.
CHARACTERISTICS OF THIS PROJECT
UNIQUE ORIGIN
At LUQUE ECOLÓGICO, we want to offer our customers a truly special organic olive oil, so we have separately harvested and processed a certain amount of olives with special characteristics:
- OLIVE GROVE: known since ancient times as “El Ángel.” It is located in the Castro del Río area, very close to the town, and has belonged to the family for over 3 generations.
- VARIETY: the name “Pajarera” comes from the preference birds have for eating this variety over others they may find in the field. This is due to the smoothness and fruitiness typical of this variety.
- OWNER: the LUQUE family has been well known in the organic sector for over 20 years, as Jose Antonio Luque, the founder of Alcubilla, was one of the pioneers of Organic Farming in Spain in the 1980s.
- MASTER: Rafael Sánchez, our friend/employee, is the person responsible for the production process of this precious juice. Due to the special characteristics and conditions of the process, his experience, passed down from his father and grandfather, is vital for the project’s success. In 2015, he was awarded the title of Best Master in Spain by AEMO (Spanish Association of Olive Grove Municipalities).
LIMITED EDITION
It is well known that QUALITY is properly obtained when working with small-scale productions to which special care can be devoted. Combined with the special organoleptic characteristics of the “Pajarera” variety, such as its smoothness and delicate fruitiness, this has led us to create this “Limited Edition.”
The process has been carefully managed from the start, collecting a limited amount of olives from a specific farm, “El Ángel,” at its ideal moment of ripeness and using traditional, non-aggressive methods with the product and the tree. These olives were transported to the mill within 2 hours of harvesting and were immediately milled at low temperatures, preserving almost intact their aromatic notes and polyphenols.
Once this precious oil was obtained, it was stored in separate containers to maintain its organoleptic characteristics and was bottled as a limited, numbered edition (marked on the back label of the bottle).

One of the principles we have set as an organic company concerned with the environment is to contribute to the preservation of biodiversity. To this end, we are committed to preserving and developing the local variety known as “Pajarera,” thus helping prevent it from disappearing.
