ORGANOLEPTIC CHARACTERISTICS: Medium fruitiness of green olive with slight ripe nuances. Notable notes of aromatic herbs and fruity hints of almond and apple. Its entry on the palate is sweet, slightly bitter, and progressively spicy. The aftertaste is herbaceous and almond-like, making it a harmonious oil in all its olfactory-gustatory attributes.
RECOMMENDED USES / PAIRINGS: Green salads, baked potatoes, gratinated mussels, tuna tartare, grilled chicken, tomato soup, gazpacho, fresh cheeses, white fish, and grilled meats.

Our Extra Virgin Olive Oil is produced by the Luque family in the beautiful town of Castro del Río in Córdoba (Andalusia), Spain. Through generations (7th generation as olive growers and 5th as olive millers), our family has been cultivating olive trees in its own groves, and in the late ’80s, we chose the organic path to produce the highest quality.
We strive to maintain the stability of organoleptic quality throughout the entire season (and season after season) based on the know-how of our master miller when blending different varieties into a coupage, such as Picual and Arbequina, in order to offer a balanced flavor that can be used in multiple dishes.
Our organic olives are harvested early in the season while still green to produce the prized oil. Once harvested, the olives are crushed within hours, and this oil is obtained at low temperatures, ideal for preserving the quality, flavor, and aroma of the olives.
