ORGANOLEPTIC CHARACTERISTICS: Very complex oil made from olives at their peak ripeness, with subtle notes of lychee and passion fruit, and at times reminiscent of aromatic plants such as mint or spearmint. On the palate, it is very well balanced with a pronounced sweetness. Bitterness and spiciness are mild and in perfect harmony.
RECOMMENDED USES: Scallop carpaccio with citrus, burrata salad with mango and basil, salmon tartare with avocado and lime, melon gazpacho with spearmint, asparagus and parmesan risotto, corvina ceviche with passion fruit, quinoa salad with mint and pomegranate, yogurt ice cream with olive oil and honey.

With the aim of protecting ecosystem diversity and adapting its olive groves to the challenges of climate change, in 2021 << ELANIO >> was born — the project through which LUQUE ECOLOGICO carries out sustainable initiatives in the region of Castro del Río, Córdoba. As a result of these initiatives and after a thorough analysis of the olive groves, the environmental scientists who participated in the project have defined the “Best Environmental Practices” that will enable LUQUE ECOLOGICO to promote biodiversity in olive cultivation and improve olive oil productivity, establishing itself as a benchmark for sustainability in the olive-growing sector.
And all of this is done with one obsession in mind: to have LIVING SOIL. For this reason, we work every day to improve its health and, consequently, the balance of our ecosystem.
