ORGANOLÉPTIC CHARACTERISTICS: Medium fruity flavor of olive and green leaf with slight mature tomato nuances. Its entry on the palate is sweet, with a slightly spicy finish that is balanced by bitterness. The aftertaste is almond-like and confirms the greenness detected in the nose. It is a harmonious oil in all of its olfactory and gustatory attributes.
RECOMMENDED USES: Salads, marinated fish, gratin vegetables, soups, risotto with artichokes, grilled fish, salmon tartare, roasted chicken or lamb, fresh cheese.

The name Pajarera comes from the preference that birds have for eating this variety over others they may find in the field. This is due to the smoothness and fruity characteristics inherent to this variety. It is an autochthonous variety from the limestone lands of Castro del Río (Córdoba, Spain), and its cultivation has experienced a drastic decline since the mid-20th century. The Luque family has maintained the plantation started 30 years ago and is working on its recovery.
